Springtime Decadence: Faieza’s Crème Brûlée Recipe

Faieza’s recipe is perfect for both traditional dessert lovers and those following a low-carb lifestyle. She offers an alternative by replacing caster sugar and icing sugar with xylitol for a guilt-free indulgence. Here’s how you can make this masterpiece:
Crème Brûlée Recipe
Serves: 6 to 10 (depending on dish size)
Preparation Time: 15 minutes
Cooking Time: 40 minutes, plus 3 hours chilling time
Ingredients
- 1 vanilla bean
- 3 cups (750ml) fresh cream (Only full cream or double cream will do!)
- 6 egg yolks
- 1/4 cup caster sugar
- 1/4 cup icing sugar
Instructions
- Preheat your oven to 160°C. Split the vanilla bean in half lengthwise and scrape the seeds into a medium heatproof bowl. Add the egg yolks to the vanilla seeds.
- In a medium saucepan, heat the vanilla pod and cream gently without boiling. Gradually whisk the hot cream mixture into the bowl with the egg yolks and vanilla seeds.
- Place the bowl over a saucepan of simmering water. Stir continuously for about 10 minutes, or until the custard thickens slightly and coats the back of a spoon. Remove the vanilla pod.
- Divide the custard into 6 x 125ml heatproof dishes or ramekins. Place the dishes into a large baking dish and pour boiling water halfway up the sides of the dishes.
- Bake uncovered for 20-30 minutes or until the custard is just starting to set. Remove the dishes from the water and allow them to cool to room temperature. Chill in the fridge overnight or for at least 3 hours.
- Sprinkle a thin layer of icing sugar over the custard and spread lightly with your finger. Use a blowtorch to caramelize the sugar, adding more icing sugar if needed. Be careful not to overdo it, as too much sugar can burn and turn bitter.
